Thanksgiving food safety - tips to avoid foodborne illness

As Thanksgiving approaches, New York State health officials are urging residents to prioritize food safety to prevent foodborne illness.

"The holiday season is a time for family, friends and food. The Thanksgiving meal is often the most elaborate meal cooked all year, which could be a contributing factor in mistakes that could lead to foodborne illness," said State Health Commissioner Dr. James McDonald. "We want to ensure that New Yorkers stay healthy by taking simple food safety precautions and encourage everyone preparing meals to follow this advice to keep your loved ones free from foodborne illness.”

"There’s no question that one of the best ways to spend the holidays is by sharing delicious meals with family, friends and loved ones, so taking the proper steps to keeping our food safe is important not just for you but for everyone around you," said Department of Agriculture Commissioner Richard Ball. "This holiday season, we urge you to keep yourselves and your loved ones safe by handling, storing, and preparing the delicious, festive foods that make the season so special with care!”

Here are essential food safety tips to keep in mind:

Don't Wash Your Turkey:

Washing a turkey can spread bacteria to kitchen surfaces and utensils. Instead, focus on cooking the turkey thoroughly to an internal temperature of 165°F.

Safe Thawing Techniques:

  • Refrigerator: The safest method, allowing 24 hours for every 5 pounds of turkey.
  • Cold Water Thawing: Submerge the turkey in cold water, changing it every 30 minutes.
  • Microwave Thawing: Follow the microwave's specific instructions.

Maintain Cleanliness:

  • Wash hands, utensils, and cutting boards with hot, soapy water before and after handling raw meat.
  • Avoid cross-contamination by keeping raw meat separate from other foods.

Use a Food Thermometer:

  • Check the internal temperature of the turkey in three areas: the innermost part of the thigh, the innermost part of the wing, and the thickest part of the breast. All should reach 165°F.
  • Avoid stuffing the turkey before cooking to prevent bacterial growth.

Safe Food Storage:

  • Refrigerate leftovers within two hours of cooking.
  • Store leftovers in airtight containers and consume them within four days.
  • Reheat leftovers to 165°F before serving.

By following these simple guidelines, you can ensure a safe and delicious Thanksgiving feast for you and your loved ones.
