Barton Orchards has become one of the Hudson Valley’s best-known agritourism destinations, growing from a small wholesale apple operation founded in the 1970s into a popular 180-acre attraction.
Famous for its cider donuts, family activities, and lively atmosphere, the farm is now expanding its reputation through a growing craft cider program led by beverage industry veteran Larry Stock.
Stock, formerly a co-owner and production leader at Mill House Brewing Company, has brought years of brewing expertise to Barton Orchards. His transition from beer to cider reflects his passion for working more closely with nature and seasonal agriculture.
Stock describes cider making as a process that responds directly to weather conditions and fruit quality, making it more similar to winemaking than brewing.
Working alongside owner Peter Barton, Stock aims to create ciders that appeal to a broad audience while maintaining authentic apple character. His approach avoids overly sweet styles and instead focuses on balanced, approachable products made with 100% fresh-pressed New York apple juice.
The cider production process uses minimal intervention, without heavy filtration or dilution, allowing the fruit’s natural flavors to stand out.
The orchard’s cider lineup includes Tractor, a crisp semi-dry flagship cider, along with fruit-inspired varieties such as Plow, made with raspberry, Hayride featuring black cherry flavors, and Harrow, a seasonal cranberry-spice blend released during the fall.
Barton Orchards now operates an impressive beverage program featuring 56 tap lines spread across three locations on the property, including several house-made ciders and a strong selection of New York craft beers.
Despite the farm’s large crowds and entertainment-focused environment, Stock remains committed to building personal connections with visitors through locally crafted products.
The farm is also expanding distribution of its cider products throughout nearby counties, with plans for broader statewide availability. That growth will be highlighted during Barton Orchards’ 10th Anniversary Cider Festival on June 6, celebrating both the farm’s history and the future of New York craft cider.
