Cornell Offers Aseptic Dairy Safety Training 2025

Dairy processors working with shelf-stable, thermally processed low-acid and acidified low-acid foods are required to comply with the Food and Drug Administration (FDA) regulations under Title 21 of the Code of Federal Regulations, Parts 108 and 113.

To meet this standard, the FDA requires that supervisors of aseptic processing and packaging systems, as well as container closure inspectors, complete specialized training through an approved program.

This autumn, Cornell University will offer a Better Process Control School for Aseptic Systems a course designed to meet these requirements and based on the 9th edition of the curriculum.

The program provides essential training for ensuring the safety and stability of aseptically processed dairy products, including beverages, creamers, smoothies, and other shelf-stable items.

The two-day virtual course is scheduled for September 8-9, 2025, running daily from 12:00 p.m. to 5:15 p.m. (Eastern Time). Instruction will be delivered online via Zoom, combining expert-led sessions with examinations.

Day one begins with an introduction to the program, followed by lectures on the microbiology of thermally processed foods, sanitation practices for continuous systems, and the use of flexible and semi-rigid containers.

Day two explores thermal processing fundamentals, aseptic processing and packaging, and mild thermal processes. Exams will be administered online after each day’s instruction, with certificates awarded to students who successfully complete the tests.

The registration fee is $500 per participant, with an additional cost of $85 plus shipping for the required textbook, Canned Foods: Principles of Thermal Process Control, Acidification and Container Closure Evaluation.

Students will receive ordering instructions via email after payment. Cancellations made after September 1, 2025, are eligible for a partial refund of $150.

Students must have a computer with a camera, reliable internet, and access to a quiet workspace. Full participation, including visual engagement with instructors, is required for certification.
